Deliciously Decedent Almond and Dark Chocolate Gluten Free Cookies
This is a OMG situation, these biscuits are so delicious that you will find you will have to double this recipe otherwise you might find that the guests don't get a look in over the crew.
1 1/2 cups of Almond Meal (Ground Almonds)
2 1/2 to 3 Tablespoons of Coconut Oil
2 1/2 Tablespoons of Coconut Sugar either brown or blonde can use a light tasting honey instead of coconut sugar
1 teaspoon of Natural Vanilla Essence
60g Good Quality Dark Chocolate Buttons or other Dark Chocolate cut into 1cm pieces.
1 1/2 Tablespoon of Dutch Cocoa or Raw Cocao
2 teaspoons of water if cookie dough seems dry
Melt the coconut oil over a very low heat watching at all times as it is very flammable. Place almond meal, coconut sugar, vanilla, dark chocolate and cocoa into a bowl and mix. Pour in oil and mix.
Using your hand, get small balls of dough and then squish them onto a lined baking tray and add a piece of chocolate onto the top. Mine a looking a little rustic, I sure with practice a more perfect formed cookie will appear.
Bake at 130 - 150 degree Celius for 30 - 40 minutes or until done. Check the cookies by eating one from the oven, since they are brown its hard to tell.
