Sunsail boats in the BVI's


Mango Lassi 

Serves 4

500g ripe mango
250ml chilled milk
250ml thick natural yoghurt

Method

De-skin the mango and dice the flesh, place into a blender and blend with a pinch of salt, then push the pulp through a sieve using a back of a spoon to remove the stringy fibres, this will be a thick syrup like pulp.  Place in fridge to cool.

Place the mango, milk and yoghurt into a blender and add 8 ice cubes, blend like you would a smoothie.

Great to serve with curry or as an afternoon drink in the tropics.
