Stacey's Carrot Cake
My friend Stacey has been making this Carrot Cake for years. Quick and simple to make, which is always great especially if you are a busy mum :).
2 cups of finely grated carrot
2 eggs
1 cup white sugar
3/4 cup oil
1 tsp of vanilla essence
1 1/4 cups flour
2 -3 tsp cinnamon
2 -3 tsp mixed spice
1 teaspoon baking soda
1/2 tsp salt
Method
Turn mixture into a round lined cake tin and bake at 170 degree Celsius oven for 45 minutes or until skewer pulls out clean or cake bounces back when pressed lightly.

Method
Grate carrots finely and set aside. Mix eggs, sugar, oil and vanilla in a food processor until smooth, or whisk together in a medium bowl. Add carrots and remaining ingredients flour, spices,soda and salt. Process together but do not over mix. For a spicier darker cake add more spice.
Alternatively can microwave, turn cake mixture into a greased 10 cup capacity ring microwavable pan, cover with plastic cling film. Microwave on high for 8 minutes or until springs back.
Ice with lemon butter icing and garnish with chopped toasted walnuts.
