I know I am on an Indian pathway at the moment but here is a little trick to cool it down if a heat explosion is occurring to your dish.
If when making your most delightful curry and your hand slips whilst putting in the curry powder or chilli paste, try adding a little sugar to temper the heat.
Plus another trick to dull the heat down is to serve the dish with thick plain unsweetened yoghurt mixed with chopped mint or serve with a mango and mint salsa.
