Caramel Crumble Slice

Caramel Crumble Slice
Everyone always loves this slice, great with afternoon coffee or cut into petite squares for petite fours.  Quick and easy to make, double the recipe if making for crew because its guaranteed to be a hit.
This is one of my favourite slices to have with fresh coffee, whilst sitting with a good magazine at hand.

Caramel Crumble Slice


1 1/2 cups of flour
1/2 cups of brown sugar
1 teaspoon of baking powder
125g butter melted

395g can of Sweetened condensed milk
2 Tablespoons of golden syrup
1 tablespoon butter


Preheat oven to 180 degrees Celsius, Grease a 20.5 cm x 20.5 cm square tin

Combine flour, baking powder and brown sugar in medium bowl.  Stir in melted butter and combine mixture together.  Reserve 1/3 of the mixture for the topping and  press 2/3 of the mixture into the square tin.

Bake for 10 -12 minutes, while the base is cooking make the filling.

Combine the condensed milk, golden syrup, and butter in a small saucepan and cook over low heat, stirring off and on for five minutes. 

Remove the base from the oven after 10 minutes and spread filling over the base, sprinkle with the remaining 1/3 of the base mixture and cook for another 10 -15 minutes.

Leave to cool in the tin.

  1. I followed instructions exactly but the condensed milk layer was very runny. When I put the crumble on top it sunk. It's in the oven now and there seems to be no sign of the crumble topping at all. Any suggestions??

  2. I suggest the time for simmering the caramel wasn't long enough for your element. Simmer the caramel until it changes color and thickens somewhat. Stir it constantly or it'll catch and burn on the bottom of the pot. (because of the high sugar content it will simmer at a low heat but the 5 mins timing starts from when it bubbles in general.)
