Molee (Spiced Indian Fish Dish)

MOLEE (SPICED INDIAN FISH DISH)
This is a beautiful recipe, it comes from Kerala on India’s west coast, with this recipe you can add more spice as desired, it is very quick and easy to make too, enjoy. Great for entree, main, lunch, and crew.
Serve 6
INGREDIENTS
1 Tablespoon oil
1 Large onion finely sliced
3 garlic cloves crushed or finely diced
2 small green chillies very finely chopped or can use red chillies if no green ones on board
2 teaspoons ground turmeric
1 teaspoon ground cumin
4 cloves
6 curry leaves
400ml coconut milk
½ teaspoon of salt
600g of fine fish such as sole, guarnard, leatherjacket, pomfret
1 tablespoon chopped coriander leaves

METHOD
Heat oil in a heavy based fry pan, add onion and cook on low heat for 5 minutes not browning it.
Add garlic and chilli and cook for another 5 minutes or until onion is transluscent, add the spices of Turmeric, coriander, cumin and cloves and mix and cook for a further 2 minutes.
Mix in curry leaves coconut milk and salt and bring to a fast simmer then reduce to a slow simmer for 20 minutes for the ingredient to fuse together.
Cut the fish fillet into your preferred portion sizes and add to the sauce, bring the sauce back up to a simmer and cook 5 minutes or until the fish is cooked, taste and season with more salt if desired. 
Stir in coriander leaves just before serving and garnish with curry leaves if desired.
Serve with basmati rice.
