letter-spacing: 0px; line-height: 25px; margin: 0px 0px 13px; outline: 0px !important;">With many of you being on superyachts through the pandemic, here is a post on how your immune system works. The American Pfizer vaccine places a lab-made protein around each cell in the body which causes the virus not to be able to penetrate the cell and take it over basically. But if you are not immune-compromised your body has the ability to fight viruses, bacterias, and pathogens that invade the body on a daily basis. The key is to eat healthy, exercise, and relax.

Understanding the immune system is key to understanding how our bodies have the ancient innate ability to fight a virus that we come into contact with. Dr Bruce Lipton received a B.A. in biology from C.W. Post Campus of Long Island University in 1966 and a PhD in developmental biology from the University of Virginia in 1971. He changed the belief about biology by discovering that all cells begin as the same cell, but the environment changes the purpose and function of the cell.

Bruce Lipton is a world leader in Epigenetics; what is epigenetics, you may ask? Epigenetics is the study of how your behaviors and environment can cause changes that affect the way your genes work. Therefore your genes don’t control your cells, your environment, perception, and behavior do. He states, “If you change your perception, you change the reading of your genes”.

Dr. Bruce Lipton in the above YouTube video explains how our bodies work to fight viruses, bacteria, and other pathogens with our body’s impressive immune system and protective barriers. He describes how Covid affects the lungs which is really interesting, as Covid thrives in a cooler environment, the lungs are cooler as we breath in cold air. This is why the lung are being effected by Covid as it is the perfect thriving and entre point for the virus.

Boosting your immune system is the key to fighting the virus. Lipton explains four fundamental ways to boost immunity.

Through nutrients, whole natural organic food such as fruit and vegetables.

Supplementation of crucial nutrients; in New Zealand we lack some key nutrients in the soil. These are magnesium, essential in healing the body as it relaxes muscles and the nervous system. A stressed body is dramatically compromised to fight off viruses and heal.

Zinc, required to heal tissue which is essential for the repair of the lungs. Zinc is a superpower anti-oxidant that inhibits oxidation which damages cells.

Selenium is an anti-oxidant also and protects the body from infection, so excellent in immunity. In addition, selenium is an essential mineral for mental health, lacking in selenium can lead to low mood.

In studies, Vitamin D has been an influential component in seeing Covid rates decrease in the summer months. Covid is higher in the African population in Scandinavia due to low sunlight and darker skin preventing the absorption of sunlight which is the ingredient to create vitamin D for the body.

Vitamin D is a powerful anti-oxidant, so supplementation is essential if you do not receive much sunlight in the winter months. Here is a scientific paper from the Royal College of Physicians https://www.ncbi.nlm.nih.gov/pmc/articles/PMC7385774/ on Vitamin D & Covid.

In the USA, vitamins C and D are low in the population, states Bruce Lipton.

Exercise, boosts the immune system through the increasing flow of nutrients and detoxification. Movement increases cardiovascular output and input, pumping nutrients, cells, toxins around like a fully functioning factory. If the body doesn’t exercise, it’s like the factory is not working at total capacity and can become sluggish and inefficient.

Reducing stress is vital, because stress hormones are released when the body is under stress causing the immune system to shut down. The body doesn’t need the immune system if we are running from the lion, it needs all the energy for the muscles to run and protect the body from harm. So staying relaxed and de-stressed is vital.

https://www.youtube.com/watch?v=OMW_S2GS6eI&list=PLye0kjhtPMdNZSfA_vOjldG5KpnLf7Sig&index=6

Bruce Lipton goes onto explain that the Covid mortality rate is the reflection of the poor health of the population and their low immunity due to lack of nutrients, exercise and high stress. Rather than the virus itself. So why are countries not addressing the health of the nation through education on healthy living and making healthy wholefood cheaper and processed foods more expensive?
<p style="box-sizing: border-box;
It is beneficial to have a look at your food diary and then evaluate what swap outs you can do to go from unhealthy food options to healthy tasty food options. Planning meals can help to keep you on track and decluttering your pantry to remove temptation is key. Remember its all about balance and interestingly you will find that once you are on your healthy eating journey, junk food and processed foods become less appealing.

Key points are

Always have a protein breakfast as this will curb hunger, stabilize blood sugar levels and give you a good boost of B vitamins.

Have protein with every meal, again this will make from more sustainable energy and in this modern world, we often are overloaded with simple carbs which cause sugar spiking in the blood.

Put vegetables in whenever possible and get creative with dips, roasting, salads, dipsticks.

Swap out vegetable oils such as sunflower for coconut oil, refined if you don't like the taste. This can be used for roasting and it has a high burn point which is great for cooking. Drizzle cold-pressed olive oil on bread, vegetables, mix into dips this is great for the skin, nervous system and for detoxifying cells.

Create a recipe book, if it's a good recipe it goes into the book. You can keep another one for ones you want to try in the future.

At this time reviewing our diet, learning new ways of being and setting new habits is key to boosting immunity and this is the prime time as many of us are in lockdown. A great way to review your diet is via a food diary for 3 days. As many of us don’t realise what we do eat since this is done subconsciously in response to stress, boredom and habit, writing down each piece of food and drink that goes into the body makes the conscious mind aware.

Building a schedule; people are very much in tune with
schedules we have our circadian rhyme (body clock) which works best when we
eat, sleep, wake-up, exercise at the same time each day, the detoxification of
our organs run to our internal clock too.
The day and night form us into a schedule, naturally, we would wake with
the sun and sleep/rest after sunset.
Even the moon affects our rhyme with many women experiencing their
period around a full moon.

The seasons see us changing our schedule with naturally
slowing down and hibernating in winter and spring and autumn brings more life
and activity as we would naturally prepare the soil, sow seeds and get ready
for the summer and autumn bounty.
Summer can be a time of relaxation once again.

During the time in lockdown in New Zealand, it is very
soothing to create yourself a schedule, a natural rhyme to work too. Since this is a new experience writing down
what you want in your schedule such as breathing exercises upon waking, walk-in
nature at 4 pm with the kids each day or dog walk helps to form a
schedule. This can be a fun task writing
what you wish to schedule into your new life.

Keeping the same basic schedule each day such as the time

Change your thought, change your reality. The thought is powerful but why? Our thoughts are influenced by perception and perception is influenced by our up-bring. From 0-7 years of age, we are in a hypnotic state (this is scientifically true) absorbing the world and creating a virtual reality by a programming of the subconscious mind.

Life after 7 years of age often is hinged on this subconscious programming.

So for this Day 3 of your vitality programme focus on POSITIVE THOUGHT.

When a negative thought comes into your mind switch it out straight away with a positive thought, this can be a random positive thought such as I am so grateful for living in New Zealand, or it can be a flip of the negative thought you have just had in your mind. Such as ‘’I am so worried about what is going on at the moment’’ flip it ‘’I am so grateful that my family is so healthy and we have healthy food to eat”.

This might feel strange at first as negativity maybe your familiar and positivity the unfamiliar (as humans we are trained to be negative for survival). After a few days, it will get easier as positivity becomes familiar.

Write on your hand, screen save it or place a rubber band on your hand and each time a negative thought comes it ping it and go to a positive thought. It’s actually really fun.

Remember you are the government of all your cells so being a positive leader creates a positive healthy cell which creates a healthy body, mind and spirit who is in a relax, restore, rest and digest way of being. This greatly boosts immunity and quality of life.

Our breath, one of the most valuable tools in our natural immunity tool kit. In the modern world with stress part of many peoples daily life, our breath becomes more shallow which causes less oxygen into the body and greater carbon dioxide build-up. (SEE BREATHING EXERCISE AT THE BOTTOM OF THIS POST).

The shallow breathing is caused by the stress response in the fight or flees that would naturally be saved for short bursts of stress in our caveman situation. In the modern world, stress is often prolonged and therefore shallow breathing becoming the normal state of the body.

Switching to long deep breaths is a matter of retraining the subconscious mind into a parasympathetic nervous system which is the rest, digest, repair and restore the nervous system. By breathing in a relaxed manner has massive positive impacts on your health.

By breathing calmly and slowly it tells all your cells that the government (you/mind/spirit) is in control and that everything is great. This causes blood flow to the digestion for nutrient absorption, it allows nutrients and toxins to flow in and out of cells, it calms the nervous system which then can function clearly in its signalling throughout the body functions for hormones, enzymes, digestion, heart, lung and kidney function. Most importantly you will feel less anxiety, you will find you will feel more positive, your skin may glow as more oxygen is fed to every cell of the body.

EXERCISE; For the next 21 days I would love you to do this breathing exercise that the Navy Seals do when in a stressful situation.

Breath in through the nose, wait 4 – 5 seconds and breath deeply out through the mouth into the belly then wait 4 – 7 seconds repeat, do any many as you feel comfortable without strain.

Do this breathing technique upon waking (place a reminder by your bed), before lunch, before dinner and then before bed. Put an alarm on your phone and screen saver on your computer and phone.

Do this for 21 days or more to shift your body from stress and anxiety into rest, relax, restore and digest way of being. It takes over 21 days to change a habit.

Do this today and tell your friends.

I have never tried this before, it smelt like slightly burn't caramel toffee.

So many guest and crew have particular health issues and introducing them to nutrient dense superfoods is super exciting for me and for them when they realize just how delicious super whole foods are.

Maca is a root vegetable that comes from Peru. Maca in the past few years has hit the Super Food status, one quality it holds is that it is adaptogen which means when consumed it helps the body cope with stressors due to its high anti-oxidant value and micro nutrient density.

Maca is generally available in powder form this making it extremely easily for it to enter into the blood stream as its small particle form allows for easy digestion.

Maca has had many scientific research to investigates its many beneficial effects for the human body. And historically the people of Peru used this Maca root for health and vitality.

According to the US National Library of Medicine
Maca powder is....

Is high in Antioxidant

Lowers cholesterol and triglycerides in the liver

Lowers and stabilises blood sugar levels

Can improve and prevent neurological damage (due to antioxidant value)

Increases energy

Improves mood

Improves memory

Increases Libido

Balances female and male hormones

Reduces anxiety and depression

Is very beneficial for menopausal related symptoms

According to the US National Library of Medicine it is valuable for osteoporosis as it is high in iron and calcium.

A great way to add Maca Powder into your diet is by placing it into a shake. This is my simple easy recipe that I have in the morning or lunch to get me through the day.

1 - 2 heaped teaspoons of Maca powder
2 - 3 dates or 1 teaspoon on honey
1 - 2 heaped teaspoons of Cocao
200ml of nut milk (I used almond milk unsweetened)
150ml of coconut water
1 tablespoon of chai seeds.

Place all into a nutri-bullet or blender whizz for 30 seconds. Can add coconut oil and/or avocado too if you wish.
Sprinkle with Cacao and add a stainless steel straw. Drink :)

This is great placed into a thermos to take to work or school.
I do use a bread maker because I find it an amazing time saver but it will work if doing by hand too. By making your own bread there are no additives or preservatives and it is alot cheaper that buying organic stone ground bread.

Basic Stone Ground Bread Dough

250ml Warm Water
2 Tablespoon's Olive Oil
1 Teaspoon Salt
2 Teaspoons Sugar
3 Cups of Organic Stone Ground White Flour
2 Teaspoons granular yeast

Place the ingredients in order starting from the top into your bread maker pan and place on dough setting. This generally takes 1 1/2 hours but bread makers vary.

Preheat oven to 220 degrees Celsius

Once finished, remove from pan and shape into desired shapes, I cut mine into 8 then grated cheese and swirled it into the dough whilst twisting the dough and the buns simply shape into balls and cut a cross on the top so they can expand. Place on a lined tin or can use oil or flour on the tin so will not stick.

Let prove (rise) for 1/2 hour in a warm place, I place my tin in a plastic bag to prove for best results.

Place in preheated oven of 220 degrees Celsius and bake sticks or buns for around 25 minutes or until done this might be quicker or longer depending on oven and bun size.

Enjoy :)
Make from coconut oil which we now re-realise is actually good for us is a key component in this recipe. Make sure you use good quality cocoa as many cheap and some main stream brands are of poor quality. I used peanut butter as I had it on hand and it worked well.

Serve this chocolate with coffee or as part of a dessert. Crew will just eat it randomly!! Breakfast, lunch or dinner lol!

Ingredients

1 cup coconut oil

1/2 cup honey

1/2 cup nut butter, peanut butter, almond or cashew

1/2 cup cocoa powder (good quality)

A pinch of salt (Himalayan)

Method

Melt oil, honey, butter don't leave this unattended as coconut oil has a low flash point and melt over a slow heat. Add in cocoa and salt.

Pour into lined with baking paper square tin.

Freeze 1 -2 hours

Cut into squares or triangles.

I leave it in the freeze just before serving especially in the tropics as coconut oil melts easily.

I like to infuse this chocolate with mint essence, soaked rum raisin, chopped nuts and crushed praline.

Angela Orecchio from OnBoard OnLine writes an interesting article 'Yachting & Healthy Living: Can They Actually Co-Exist' Over the years I have seen many a slim new crew ranging from 18 - 28 step a board 'Ahoy Matey', young, slim, keen and ready to see the world. As a veteran of this Super Yacht Living I lightly node my head and watch yet another one full into the 'Superyacht Lifestyle'.

Wine, spirits, fillet steak, cheese boards, luscious desserts, lack of water, long days, short sleeps, months of work and no play, strained crew relationships (where the sleeping arrangements change often) the high life.

Result; expanding waist lines, bad skin, numerous hang overs, change of mood, depleted nutrients, turning paradise into hmmmm, questioning if you actually want to be there.

Super yachting is a good life if you play it right and follow a few simple rules to create a healthy life style on-board. Check out the article by Angela Orecchio from OnBoard OnLine 'Yachting & Healthy Living: Can They Actually Co-Exist' .
As a Nutritionist as well as a chef getting nutrient dense foods on a daily bases and limiting food intake to your bodies requirements is one of the key factors to sustaining healthy longevity on Superyachts. As chef's we play a key role in providing and educating crew as well as guests on healthy tasty food choices.

A nutrient dense sample menu

Breakfast:
Wake up with Chai Seeds; Chai Seeds soaked in Coconut Water accompanied by home-made coconut yoghurt whirled with a pineapple couli.

Chef's Sourdough Seeded Spelt Bread topped with freshly made kale and sundried tomato pesto topped with free range eggs and served with a side of wilted spinach sprinkled with toasted garlic and sesame seeds cold pressed olive oil dressing.

Offer fresh juices through out the day from the juice fountain. These are nutrient dense add spinach, kale and vegetables rather than pure fruit that are high in sugar. Water down with coconut water if sweet.

Lunch:
Wild rice crab salad infused with coriander and lime dressing.

Fresh tropical fruits of mango, papaya and banana served with Dark Chocolate Chai dipping sauce.

Pre-dinner drink; Summer Fruits Kombucha

Dinner:

Leafy green herbed Salad drizzled with lemon and avocado oil.

Snapper poached in lemon and dill seafood stock accompanied by oven baked crispy courgette chips and broccoli creme fraiche puree.

Apricot and coconut bliss balls coated with Fair Trade white chocolate.

Herbed Tea's or Coffee.

Personally I find nutrient dense whole foods so much more tasty than lifeless, processed foods. One vital key to nutrient dense food is Fresh and Organic (where possible), these foods need little work to change them into a great menu.Clarehttp://www.blogger.com/profile/15390836024182147502noreply@blogger.com0tag:blogger.com,1999:blog-5960205458372016476.post-31874410240461116762014-06-14T08:38:00.001+12:002014-06-14T08:38:17.498+12:00Toasted Pumpkin and Sunflower Seeds with Himalayan Salt

These are super moorish and sooo good for you with pumpkin and sunflower seeds being high in good high-density lipids (HDL) omega-3 fatty acid.

These types of lipids (fats) carry fat and cholesterol away from all cells in the body and transport them to the liver for either excretion or to be re-utilised (recycled) therefore preventing cholesterol accumulating in cells which can have a negative impact on the body.

High in zinc which is a great protector (think of zinc like a shield) from stress, infections and toxins.

A good source of vitamin E which is a fat soluble vitamin that plays a large role in cell signalling so essential for optimum communication between cells.

Pumpkin seeds have many benefits, they positively influence the colon, spleen and pancreas are very good source of fibre so help with constipation. Are beneficial in prevention and expelling of worms such as round worm and tapeworm from the digestive system. You are probably going worms yuk! but this can be a big issue then cruising the world with coming in contact with an array of people and various countries where you body has not got the immunity build-up for their particular worm or pathogen.

Seeds can go rancid very quickly so always buy from a busy supermarket, shop or provisioning agent that has high turn over and use quickly once you purchase them. Keep in a cool, dry place preferably in glass.

It is of great nutritional benefit to soak seeds before use as it expels phytic acid that prevents nutrient absorption into the body for further reading on this subject check out The Weston A. Fishing is often the entertainment for long voyages between countries, continents or islands so coming up with an array of fish dishes is essential for the Superyacht Chef. One way that can turn fish into a multitude of dish options is smoking the fish. Within this simple cooking method there are heaps of options within itself, use whiskey, rum, wines, different sea salts, herbs, lemon pepper the list goes on especially with a good imagination.

1 Tablespoon brown sugar

Optional a capful of whiskey or rum

These quantities depends on size of fish so judgement call is required.

Rub the marinade all over the fleshy side of the fish or fillet and leave to marinate in the fridge over night or for longer than 5 hours. Some people do wash off the marinade and then dry the fish out but we don't bother we just simple rub off the marinade.

I have two ways of smoking either moisten the Manuka Wood chips 1/2 hour before or do a dry wood smoke and some people moisten the wood with a little whisky, beer or wine and leave overnight to soak in.

Lemon pepper and herbs such as dill or lemon thyme can be added to the fish just before smoking it, after the marinade is removed

Follow the YouTube clip below and remember not to lift the lid during the smoking process around 15 minutes if using a Kilwell Smoker and leave for 5 minutes to rest after the methylated spirits is all burnt off.

These biscuits are very easy to create, a nice heath option for crew afternoon tea or just to have in the biscuit tin for snacking on espcially delicious coated in dark chocolate. Mix and match your favourite seeds and nuts to create a different flavoured biscuit such as cashew and sesame seed or Brazil nut and sunflower. Add a combination of nuts and seeds will add a greater nutrient profile as they each have there own nutritional strengths. Very high in fiber so great for digestive health. Enjoy :)

As you all well know I love to make most of my food from scratch if possible or at least know how to make it from scratch. This basil, spinach and walnut pesto is one such item that I like to have in my fridge most of time. This an array of possibilities from adding to pasta, topping canapes, spreading of ciabatta rolls, placing in stuffed breads or topping chicken breast. Since I am not tolerant of dairy especially cheese (even though on occasion I just can't resist) I like to make my pesto dairy free therefore no Parmesan Cheese. Personally I prefer it and it make it a lot cheaper to make too if your yacht is on a budget.

For this pesto I used walnuts which are cheapest brought in the bulk food area of your local supermarket or bulk food store. Make sure it is a busy shop as nuts can go rancid easily so high turn over is essential. If walnuts are not your thing substitute with almonds, Brazil nuts or pine nuts.

Basil requires a warm climate or warm window seal to grow so is a summer crop. Make the most of this delicious recipe that is teaming with health benefits. It contains a high amount of (E) beta-caryophyllene which has been noted to help with arthritis and inflammatory bowel diseases.

My personal favourite way to have pesto is spread thickly on organic sprout bread and topped with freshly picked tomatoes from the garden.
But most chef's of Superyachts would totally understand since this time of year can be extra busy with people escaping from the winter cold and chartering yachts or using there own yacht more often.

I have been very busy collecting and photographing an array of delightful recipes for this coming year. As I am growing older and gaining more knowledge of food I am realising the great potential of food and nutrition to prevent and heal the body from many diseases that are coming common place in today's world. So the focus for this year is to move to more nutrient dense food items and provide the knowledge I learn along the way on how food can prevent and heal the body.

I find nearly every charter has a person with allergies, food intolerance or on a special diet so having a basic back ground on this is very helpful in the Superyacht industry.

Have a lovely day where ever you are in the world :) Namaste
I have found over the years I have a far idea on what the clouds means through shear thousands of hours of sky watching. But to make it easy here are some You Tube clips explaining whats going on. I love the second one even though it is long, so vintage as obviously it is lol!

Yesterday I looked into my stores to see a container of bright orange lentils starring at me and I immediately had a craving for Dhal, such a simple dish especially in busy charter times. Filling and satisfying teamed with garlic naan bread and apricot chutney. A great meal for crew and nice served with lamb, chicken or fish for guests.
The recipe for my Lentil Dhal is as follows

Aromatic Lentil Dhal

Ingredients;

1 cup of red lentils washed
3cm fresh ginger sliced or I do use ginger spice if no fresh is available in the house.
2 bay leaves
1 cinnamon stick
2 Tablespoons of butter
1 large onion diced
2 garlic cloves crushed
2 teaspoon turmeric
1 teaspoon cumin
1/2 teaspoon of garam marsala
1/2 teaspoon chili flakes
2 Tablespoons of lemon juice
1/2 teaspoon of Himalayan salt
1 Tablespoon chopped coriander leaves

Naan bread or poppadoms

Place lentils, cinnamon stick, bay, ginger in a large pot with 3 cups of cold water.
Bring to the boil and reduce to a simmer for 10 - 12 minutes, stirring to prevent it sticking to the bottom.

Heat butter and add onions and garlic cook for 3 minutes add remaining spices and cook for 1 minute, add lentils and lemon juice cook through for 1 - 2 minutes and stir in coriander. Serve with garlic naan or poppadoms and apricot chutney.

I placed fresh spinach in mine and cooked for 2 minutes at the end.

Gluten Free Option serve with Poppadoms
